Chocolate. What can I say? Is there anything more perfectly scrumptious to put into our mouths? I think not. I must have chocolate daily. It’s not an option. I always eat some chocolate after a meal and now I have Al on this kick too. I feel incomplete without it.
Granted it usually is only a little piece of my favorite chocolate bar, Popped Quinoa 70 from Cocoa Parlor but still, very essential.
Dessert = chocolate in my book. Occasionally a fruit cobbler or pie but mostly it’s chocolate.
The perfect summer time, cool down, chocolate dessert is Chia Chocolate Pudding. It is so easy to make, COLD, delicious, and packed with nutrition (and chocolate) that you wont even feel guilty for eating the entire batch. Ok… maybe a little guilty.
Nutritional Facts about Chia Seeds:
- 1 oz contains 40% of your daily recommend amount of fiber!
- A great source of Omega 3’s, plant powered protein and essential minerals.
Chia seeds are unique in that they absorb ten times their weight in whatever liquid you combine them with. They then change from a hard seed to a gel that looks unappealingly like fish eggs. I had to say it. It’s true! But when combined with yummy tasty ingredients (like chocolate), it takes on a new luxuriously smooth and creamy texture.
Chia seed pudding is by no means new to the world but this one is my version.
Chia Chocolate Pudding
Yield: ≈ 8 – 1/2 cup servings
Time: 5-10 minutes
Ingredients:
- 3/4 cup chia seeds
- 1 – 15oz can of coconut milk
- 1/2 cup raw cacao powder
- 1/3 cup maple syrup
Combine all ingredients together in a mixing bowl. Use a hand whisk or a fork and mix well. Cover and set in the refrigerator for at least 30 minutes.
This makes for a thick pudding – Al likes it that way.
You can easily make it more liquidly by adding 1/2 cup of water for every cup of pudding.
